If you are sending a reply in HTML, usually to a message sent in plain text at some earlier point in its existence, and wish to change quoted text with (multiple) > quote symbols to indented text ala HTML style, just run Indent & Strip Quotes (Entourage) with your new HTML reply draft message in the front.
